Recipe: vegan and gluten-free chocolate gingerbread with low-carb flours
I'm back once again trying to get you guys excited about the fitness kitchen. Morga AG: natural foods from Toggenburg
I'm talking about the traditional company Morga. You have almost all bought and used some product from their various lines; Dried fruits, nuts, flour, jams, ... to name just a few examples.
On the Morga homepage I found the following interesting information about the start and background of the company: “The Morga company originated in India: The grandfather of the current managing director, Ernst Lieberherr, moved to the foreign country in 1910 for the Volkart brothers and quickly learned to move in this new environment. During his 20-year stay in a completely different country, he got a taste for vegetarian nutrition and got to know exciting products and forms of nutrition that were previously unknown in Switzerland.
When he then traveled back to Switzerland, his luggage was full of soybeans and knowledge about vegetable nutrition. Following his new convictions, he looked for ways to share his passion with the Swiss. And so it came about that in 1930 he founded the Morga company. Since the company was founded over 80 years ago, we have been developing, producing and selling vegetarian and organic food of all kinds. “
Low carb flours and other baking aids for the fitness food kitchen
I will come back to soybeans in another blog post - today it's about the great selection of low-carb / high-protein flours and other baking aids for the fitness food kitchen in the Morga range - now also available recently at Kanela.ch.
Just in time for the beginning of Advent, I baked you a wonderful, vegan and gluten-free chocolate gingerbread; almost exclusively with ingredients from Morga - and of course high protein / low carb. In order to bake the delicious pastry, you can easily order from Kanela.ch from the sofa and start baking the next day ... it won't be long and it's Christmas!
Why so many different flours?
This is important with low-carb flours: not all flours have the same function in the dough and so an attempt is made to combine the best properties of the individual flour types and powders. Of course, I also wanted to show how large the Morga range is ... Here, for example, you could take a good 20g of flax flour and omit the hemp flour. Leaving out the flax flour is less good, because firstly it is one of the binding agents (in gluten-free dough the protein glue has to be replaced) and secondly it is an important flavoring agent.

Recipe: vegan and gluten-free chocolate gingerbread
20g chocolate protein powder vegan
10g almond flour dark
10g lupine flour
10g hemp flour
10g flax flour
5g coconut flour
5g soy granulate, ground
2g carob powder (or cocoa)
2g psyllium flour
2Msp baking powder
lots of gingerbread spice
--> mix in a bowl
40g protein drink chocolate (or almond milk to keep it vegan!)
60g sparkling wine
1 / 2TL almond butter
1 dash of apple cider vinegar
Flavor Drops Nougat nB
--> add, stir well, season to taste (sweeten a little, otherwise the lupine flour prefers)
--> 180 / approx. 15 min (stick sample)
