Natto is freeze-dried and finely ground. The fermented, protein-rich soybeans are a traditional Japanese food. Natto is eaten in Japan for breakfast, preferably with rice and fish. Cooked beans are inoculated with the bacterium Bacillus subtilis ssp. natto and fermented at room temperature for up to one day. Fermentation produces the enzyme nattokinase. The nutrient-rich natto powder can be sprinkled over finished dishes and sauces or mixed into smoothies and Gemüsecocktails. Natto goes well in cottage cheese, yogurt, soups or experimental creations. The smell of natto is a delight for connoisseurs, but can also take some getting used to. Pure natto develops a pleasant, slightly spicy taste in the mouth.

Application

The natto powder can be sprinkled over ready meals or mixed into cold and warm drinks and fruit or Gemnuit cocktails. Also goes well in curd cheese, yogurt and ice cream creations or all kinds of sauces and dips.
