Our fine green tea comes from the main island of Honshū, from Shizuoka Prefecture. The region is known as the center of the Japanese tea trade. The special soil conditions, coupled with a special climate, characterize this region and allow the plants to thrive fantastically. The result is a mild but highly aromatic cup that is carried by a fine sweetness.
Sencha is a green tea with a distinctive, fresh taste and very uniform, emerald-colored leaves. It is typical of Japanese green teas that they are pre-dried with hot air and then usually ku rztreated with hot steam at an early stage to interrupt the fermentation process.
Over three quarters of the tea grown in Japanese tea gardens is Sencha. Most regions e rzeugen different types, each of which is named after the way it is processed. There are various cultivation methods for green tea in Japan. Sencha comes from open fields (so-called "roten en") that are exposed to full sunlight. This distinguishes it from other varieties, such as Gyokuro, which grow in reduced sunlight (on so-called "oiishita en").
Use
Green teas should be brewed at a water temperature of 80-85°C (leave the water to stand in the kettle for approx. one minute after boiling).
