Tautona birch sugar is a table sweetener based on xylitol, derived from the Greek word xylon (wood; part of wood). Around 1890, the German chemistry professor Emil Fischer separated a hitherto unknown compound from wood shavings. This was called xylitol. In 1902, Dr. Fischer received the Nobel Prize in Chemistry for his diverse achievements. At the beginning of its use and research, xylitol was obtained from the Finnish birch as a raw material and is therefore also called birch sugar.
Properties:
- Tooth-friendly: The consumption of xylitol-containing foods / drinks instead of conventional sugar can help to support tooth mineralization.
- Calories / carbohydrates: Due to the lower calorific value of xylitol, the usability of the carbohydrates is lower than with conventional sugar, since only 25% of the xylitol carbohydrates are slowly metabolized in the body.
- Blood Glucose Rise (GI): Consuming foods / beverages that contain xylitol instead of conventional sugar results in a lower blood glucose increase after meals compared to conventional sugar.
Application:
1g xylitol corresponds to the sweetness of 1g conventional sugar. During the adjustment phase of 4-5 weeks, birch sugar can have a slight laxative effect.
