Black garlic is obtained by aging fresh garlic. It is not fermentation (there is no bacterial activity), but rather caramelization. The garlic is kept for 10 to 15 days at a constant temperature between 50 and 75 °C with humidity between 70 and 95%. At the end of the process, the garlic is candied and its color is anthracite black. Its flavor is reminiscent of licorice, balsamic vinegar, and candied fruit.
