Schüttelbrot is made just as its name suggests. “Shaking” gives this hard, flat bread its airy texture. Schüttelbrot is made from rye flour and water, and seasoned with salt, fennel, and fenugreek. The dough is divided into portions and placed on flour-dusted cloths to rise and rest. While other types of bread are baked after resting, Schüttelbrot is instead “shaken” on round wooden boards until it takes on its characteristic flat shape, after which it can be baked.
