Sultanas are dried grapes, similar to currants. They have thin skins and are very aromatic. The name comes from Arabic, and in the Ottoman Empire, sultanas were considered a delicacy. The fruits are small and light in color; the seeds are bred to be so tiny that they are considered “seedless.” While still on the vine, the berries are light in color; their characteristic color develops only when they are air-dried.
