Our matcha comes from the main island of Honshū, in Shizuoka Prefecture. The region is known as the center of the Japanese tea trade. Its unique soil composition, combined with a special climate, distinguishes the region and allows the plants to thrive beautifully. The result is a mild yet highly aromatic cup with a delicate sweetness. Only the finest leaves from the first harvest are selected for this matcha. This quality is also used ceremonially in matcha tea. After two to three weeks of shading, the tea leaves take on a magnificent green color. Shortly after being picked, the stems and veins are carefully removed from all the tea leaves. This tea, now known as “tencha,” is ground into the finest powder in a slowly rotating granite mill. In one hour, only enough for a small tin is produced—approximately 30 grams. The vibrant green tea powder is immediately packaged airtight to guarantee its freshness. Like all our teas, the organic matcha is also tested for potential residues such as heavy metals or radioactivity (in the case of Japan).
