Immediately after picking, the leaves are dried in the shade. This drying process reduces the bitter taste of the leaves. While most other teas are followed by a process of rolling/grating to shape the tea, this is not the Fall with Longjing. Instead, the farmer maintains the natural shape by foregoing this processing step. Another way to see this is that the shaping step is actually integrated into the subsequent frying stage. This step consists of 10 different manual hand movements that finally shape the leaves into their flat form.
