The Schüttelbrot is made as it is called. By "Schüttelteln" this hard bread patty gets its airy consistency. Schüttelbrot is made from rye flour, water and seasoned with salt, fennel and bread clover. The dough is portioned and placed on flour-dusted cloths to rise and rest. While other types of bread are baked after resting, Schüttelbrot is instead "shaken" on round wooden boards until it acquires its characteristic flat shape and can then be baked.
