Verwendung: Aus Annatto werden Würzsaucen sowie Würzpasten für Fleisch- und Fischgerichte, wie z.B. die Mexikanische "Mole", und Kartoffelkuchen hergestellt. Man färbt damit Käse und Butter, früher auch Schokolade, Pasta und Puddingpulver
Geruch/Geschmack: Ätherisches Öl ist für den veilchenartigen Geruch und den würzigen Geschmack verantwortlich
