The Demeter flaxseed flour is produced by gentle and cooled grinding of fresh "press cake", which is a by-product of the production of linseed oil. Due to the oil content of about 10 percent, it contains the valuable omega-3 fatty acids, this in combination with high-quality fiber of the flax seed. Foods rich in dietary fiber can have a favorable effect on digestion. Lignans are heat-stable, which is why this pioneering product is also suitable for baking, for example for Guetzli or cookies.
