Miso, a fermented soy paste (sometimes combined with grains), has been known in the Far East for 1,300 years for its culinary benefits and beneficial effects on health. Hatcho Miso, whose exceptionally long fermentation takes 24 to 30 months, is a true nutritional concentrate. All high-quality miso are high in protein, but Hatcho Miso contains as much as 80% more protein and 20 to 25% less salt than high-quality miso made from rice or barley. This unique source of essential amino acids, minerals and vitamins is low in calories and fat and rich in Faserum.
Use
Miso is used in all kinds of dishes to enhance their flavor, just like a bouillon cube: in soups, sauces, spreads, Gemvegetable platters, to prepare vinaigrettes, and so on. It is enough to mix a small amount of it in a little water, for an easier use.
