Miso, a fermented soy paste (possibly combined with grains), has been known in the Far East for 1,300 years for its culinary benefits and beneficial effects on health. Marakura Shiro Miso Shiro Miso is a young miso variety with a very mild, almost sweet taste. To achieve this result, industrial products often use additives such as sugar, artificial sweeteners and bleaching agents. None of this is found, of course, in Lima's Shiro Miso, which owes its mildness to amazake and contains twice as much koji, making its nutrients so particularly well assimilated. Due to the absence of bleaching agents, Marakura Shiro Miso is not quite as white as conventional Shiro Miso. 'Marakura': a guarantee of quality Shiro Miso and Barley Miso from Lima are supplied by the Marakura Shokuhin company owned by the Familie Okada, which has in-depth expertise in both the traditional production methodof miso and in organic farming and health and ecology. The Familie Okada prepares miso according to simple methods that have long been refined over the generations. It is located in the south of Japan, a region where pure water is abundant and the climate is ideally suited to the production of miso.
Uses
Miso is used in all kinds of dishes to enhance their flavor, just like a stock cube: in soups, sauces, spreads, Gemvegetable platters, to prepare vinaigrettes, and so on. It is enough to mix a small amount of it in a little water, for an easier use.
